Fire up the grill! That’s right, it’s barbecue time. Independence Day is right around the corner and we’re helping you prep for the perfect July 4th BBQ with three grilled shrimp recipes that are sure to please (and help you fall asleep when the festivities are over!). So grab the red-and-white checkered tablecloth, put on your chef’s hat and let’s get grillin’!


Seasoned Grilled Shrimp Skewers

What You’ll Need:

  • 1/4 cup minced fresh parsley
  • 1/4 cup minced fresh basil
  • 1 teaspoon dry mustard
  • 2 teaspoons Dijon mustard
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1/4 cup virgin olive oil
  • Squeezed lemon juice from 1 lemon
  • 2 pounds of peeled jumbo shrimp

Simple and delicious, shrimp skewers make for the perfect addition to your all-American bash! Start by combining the parsley, basil, mustards, salt, pepper, olive oil and lemon juice so everything mixes together nicely. Allow the shrimp to marinate in your mix for an hour at room temperature. Hint: this is a great time to set up for your celebration! When it’s time to start grilling brush the grilling rack with oil. Slide 4 or 5 pieces of shrimp onto a 6-inch skewer and let them sizzle on the grill for about 2 minutes on each side. You want them to look healthily charred, not burnt. Squeeze a little lemon on each one, plate and serve!

Quick-Peel BBQ Shrimp

What You’ll Need:

  • 1/4 cup smoked sweet paprika
  • 2 tablespoons chili powder
  • 1 packet of Stevia
  • 2 teaspoons ground cumin
  • 3 tablespoons canola oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 pounds of shelled jumbo shrimp
  • 1/2 cup thinly sliced green onion

If you like a smoky flavor with your grilled shrimp, this is the perfect recipe for you! Start by whisking all ingredients (sans le shrimp) together in a bowl. Add the shrimp when you’re done mixing and be sure to coat each shrimp on both sides with the spice rub. When your shrimps are nice and coated, place 4 or 5 onto a 6-inch skewer and grill on each side for 2 minutes, until they’re cooked through. You’ll enjoy the nice, zesty taste of barbecue while benefiting from protein-rich and low-calorie shrimp! Who said barbecues weren’t healthy?

Grilled Shrimp Salad

What You’ll Need:

  • 2 pounds of uncooked, peeled jumbo shrimp
  • Canned corn
  • 2 bags of mixed greens
  • Olive oil
  • 2 teaspoons hot smoked paprika
  • 2 avocados, peeled, cut into 3/4-inch cubes

To begin, set your grill to a heat of medium-high and place your shrimp on the grill, adding a sprinkling of salt, pepper and lemon. Cook the shrimp on each side for 2 minutes. Mix all other ingredients into a bowl as you would normally prepare a salad, and add a low-fat balsamic vinaigrette or dressing of your choice. When the shrimp are cooked, add them to the salad and mix them throughout.  You can serve this salad with grilled baguette slices to add some heartiness and crunch to this deliciously light BBQ course!
